Hello, I’m a student and I bought an Ipad pro last week from apple store online. I found out about the educational discount after I bought my Ipad. Is there a way I can receive a refund for the difference in the value?

It is not possible to get back the exact same device.
According to Apple's return policy, exchanges do not exist only a refund followed by a new purchase is possible. This means there is no way to get back the exact same iPad you are currently using (the same serial number).

what I meant was that I want the iPad that I have right now back. My own iPad not a new iPad. So if I return it at an apple store can I buy my own iPad that I’m using right now again right away?
